I have never seen a recipe up until now that cooks a steak in the crockpot let alone an the entire meal with sides. This is genius! One thing I get bored with is that most crock pot meals are soups, stews or casserole type dishes. Here you get a juicy, tender steak with soft luscious potatoes and even juicy corn on the cob with little effort at all. Stick it in the crockpot and forget about it until dinner time! Love this idea and can’t wait to try it out myself. She also served it with a Sugar Cornbread that sounds delicious.

It’s so easy and you don’t have to heat up the house and deal with the oven or boiling pots of water. Try seasoning it anyway you like as well. Since it cooks in the tin foil for 2-3 hours you can infuse any flavors you like.

Each component can also be used in any dish to spruce it up. Try the shrimp in a salad or throw then on skewers, the avocado cremà can be used in any taco, as a dressing or spread on a sandwich and then there is the flavorful and fresh corn salsa that can be eaten with chips or served up with just about anything.

This salad is literally summer on a plate. You get juicy cherry tomatoes, baby lettuce, sweet corn, buttery avocado and fresh and flavorful shrimp covered in seasoned herbs. It’s so light, bright and full of freshness. It is also so pretty. I hate when you are served shrimp with the tail still on b/c then you have to fumble with it to remove the tails. I would remove the tails before serving so everyone can just shovel that deliciously fresh salad in their mouths and enjoy without the hassle.
Whenever I go out I always scope out the quesadilla offerings on the appetizer menu because I just love them. Here is a wonderful recipe that keeps the traditional quesadilla flavors with a tastier twist adding sweet corn and caramelized onions. I love how the onions are so much more subtle and sweet after being caramelized. The burst of sweetness you get from the corn is so good against that spicy kick from the seasoning!

From Brazil To You – Corn Bread with Basil
This recipe has a super neat story in that it came from the Rio Grande Countryside where Italian immigrants settled and grew corn and created large corn plantations. It’s an Italian style cornbread from Brazil. Filled with aromatic cheeses such as Parmesan and Provolone and then you get that hit of sweet basil with the soft sweet corn. Perfect for any occasion. And when you tell them it is a Brazilian recipe they will be shocked.

I have always loved corn dogs in the summer. Of course, my all time favorite if available would be a Vienna Beef dog but any all beef hot dog you like will work. This recipe doesn’t actually ask you to use real corn but I think the addition of some grilled or cooked fresh corn would help enhance this already delicious dog. Baking it makes it a bit lighter though I wouldn’t exactly put it on your list of healthy meals for the week. Either way, it won’t disappoint and now you can have that classic carnival fair anytime.
Pinch of Yum – Healthy Chipotle Sweet Corn Fettuccine
Usually healthy and fettuccine never end up in the same recipe. Here you get healthy filled with great flavor. The pasta soaks up the wonderful flavors of the sweet corn and chipotle. You get a great creaminess from the Greek yogurt that also tames the heat in the peppers. Perfect summer pasta!
The Kitchn – Gnocchi with Squash and Sweet Corn
Here is another perfect summer pasta that utilizes those great summer squashes and zucchini that are not just healthy but add beautiful color to any dish. Six Sisters’ Stuff – Mexican Street Corn Salad
If you haven’t had Mexican street corn you are so missing out. I remember getting it while I was pregnant while in downtown Chicago off the street vendors. It was so juicy and the butter and spicy mayo mixture dripped all over my huge pregnant belly while I had greasy butter all over my face but I didn’t care. It was just that good!The ladies at Six Sisters’ Stuff took those amazing flavors and put them in a more clean and easy to eat salad. Now we can eat away without the embarrassing mess! I still must indulge when I hit the streets of Chicago but at least when I’m not downtown I can enjoy the flavors any day.
White on Rice Couple – Salmon & Corn Cakes
If you have read any of my blog posts in the past you know by now my 2 year old loves salmon filets and has since she before she was even a year. I always have left over salmon that either gets heated up as is or I try to find new ways to use it. This recipe is exactly what I’ve been looking for. It combines sweet corn with that lovely sweet salmon. Such a perfect combination. Since I love dipping sauces I would definitely be experimenting with a few. As my daughter gets older I get more and more limited regarding what she wants to eat. Most times if she doesn’t like the look of it she won’t even bother to taste. I get the “yucky” and she pushes the dish away. As annoying as this is I have been working hard finding kid friendly recipes that include tons of great nutrients and she will like.
