I wanted to start off with a simple appetizer or side dish that really highlights the avocado and adds that freshness for the upcoming summer. This delivers. You grill the avocado making it nice and buttery. The addition of a relish with peppers and tomatoes adds something sweet and fresh to balance the richness in the avocado. Definitely one of my favorites and a must try!
This recipe is so easy and uses 4 ingredients! Yes, I stated 4 ingredients which is avocado, tuna, bell pepper and freshly squeezed lemon juice. Though I’m all about the 4 ingredients I would add some fresh parsley, dill and salt and pepper to taste. Fresh and delicious are the two words that describe this recipe perfectly. I swear I can eat it everyday.
If you always have eggs in your fridge, here’s a great recipe for you. Use a whole wheat wrap to add more health benefits. The avocado adds that creaminess so you can use less mayonnaise and be sure to use low fat instead of regular. I would also add some finely chopped celery, onion and some freshly chopped dill. Just adds another dimension of flavor to an already amazing dish.

I can’t believe I never thought of making avocado fries just like the author. I can put avocados on anything. When you warm them they become so rich and buttery. The author just sprinkled them with some lemon which I’m sure is delicious but you can also serve with your favorite dip. I had to include at least one good old-fashioned guacamole recipe and this one promises to be the best. It is also one of the simplest. Serve up with your favorite tortilla chips or on top of some tasty tacos. Don’t forget to give it a healthy dose of lime juice over the top if storing overnight so it doesn’t turn brown on you. If it does, just mix well before you serve and sprinkle more lime juice over the top.
