The Avocado: A Superfood and 15 Super Recipes

The avocado is such a creamy and buttery ingredient, but also a “superfood” which according to Dr. Frank Lipman has “a myriad of healthy fats and nutrients…oleic acid, lutein, folate, vitamin E, monounsaturated fats and glutathione (to) protect your body from heart disease, cancer, degenerative eye and brain diseases.”

It has subtle flavors that can pair well with anything or stand on its own. Try these 15 recipes below using the “superfood” avocado.

I wanted to start off with a simple appetizer or side dish that really highlights the avocado and adds that freshness for the upcoming summer. This delivers. You grill the avocado making it nice and buttery. The addition of a relish with peppers and tomatoes adds something sweet and fresh to balance the richness in the avocado. Definitely one of my favorites and a must try!

 Tuna Stuffed Avocados


This recipe is so easy and uses 4 ingredients! Yes, I stated 4 ingredients which is avocado, tuna, bell pepper and freshly squeezed lemon juice. Though I’m all about the 4 ingredients I would add some fresh parsley, dill and salt and pepper to taste. Fresh and delicious are the two words that describe this recipe perfectly. I swear I can eat it everyday.

Avocado Egg Salad Wrap


If you always have eggs in your fridge, here’s a great recipe for you. Use a whole wheat wrap to add more health benefits. The avocado adds that creaminess so you can use less mayonnaise and be sure to use low fat instead of regular. I would also add some finely chopped celery, onion and some freshly chopped dill. Just adds another dimension of flavor to an already amazing dish.

I’ve told you before and I’ll say it again – I love nachos!! I love tortilla chips, cheese and all the yummy and gooey things you can add. This recipe features homemade pico de gallo which is so easy and you can control the heat level. Then top it with a great carne asada marinated meat/steak that should be easy to find in the grocery store. If you can’t find it, see here for how to marinate the meat. The creamy avocado gives it that final touch and I could make these and eat them all in one sitting. Always perfect to put out for a BBQ or party. Plus, this way you don’t end up eating the entire plate on your own.

BLT Guacamole

Guacamole is another dip I can eat an entire bowl of (and have before). Add bacon and crispy, crunchy leaf lettuce and I’m hooked. This takes the traditional guacamole to a whole new level with an American twist. Everything tastes better with bacon! This is a must try (and a must try not-to-eat-the-entire-bowl myself kind of recipe)!

Goat Cheese and Avocado Toast


How creamy and flavorful does this look? Oh how I love goat cheese but I never thought to pair it with creamy avocado making both ingredients that much more decadent. The tartness of the goat cheese will add so much flavor to the avocado and the addition of red pepper flakes will wake all the flavors up for sure. I would use a nice and crusty sour dough bread. Lately I’ve seen a sour dough with garlic at my local grocery store and would try that out too. Lava salt may not be easy to find but sea salt is everywhere and would add a nice touch due to the grains being thicker. I can eat these every single day. Few ingredients and very easy to throw together.

I can’t believe I never thought of making avocado fries just like the author. I can put avocados on anything. When you warm them they become so rich and buttery. The author just sprinkled them with some lemon which I’m sure is delicious but you can also serve with your favorite dip. I recommend some type of Greek southwest yogurt or ranch dip with a bit of a kick to cut through the buttery richness and give a little tang and spice.

The decadence of the avocado goes so well with the homemade cheese sauce and pasta. The author also adds garlic, cilantro and lime. That will make it fresh and the citrus will cut some of that richness from the cheese and avocado.

What better way to soak up that lovely shrimp than an avocado butter. Rich and creamy and so delicate. Serve this up with a margarita on the rocks and some rice pilaf with grilled seasonal vegetables. Sounds like summer fun to me. Great dish for Cinco de Mayo!

Best and Easiest Guacamole Recipe

guamamoleI had to include at least one good old-fashioned guacamole recipe and this one promises to be the best. It is also one of the simplest. Serve up with your favorite tortilla chips or on top of some tasty tacos. Don’t forget to give it a healthy dose of lime juice over the top if storing overnight so it doesn’t turn brown on you. If it does, just mix well before you serve and sprinkle more lime juice over the top.
